Ingredients

  • 3 tbsp mayonnaise
  • 1.5 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp white wine vinegar
  • 1 tsp sweet pickle relish
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • Pinch of white sugar
  • 700 g 1 lb 9 oz 80/20 ground beef
  • 1 tsp fine kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp neutral oil vegetable or canola
  • 8 slices American cheese
  • 4 brioche burger buns
  • Shredded iceberg lettuce
  • 2 medium tomatoes sliced
  • Dill pickles sliced
  • Thinly sliced white onion for topping

Method

  1. Mix mayonnaise, ketchup, mustard, white wine vinegar, relish, garlic powder, onion powder, smoked paprika, and sugar. Stir until combined. Refrigerate.
  2. Divide cold ground beef into 8 equal balls (87g each). Roll loosely. Do not overwork.
  3. Heat a cast iron skillet over high for 3 to 4 minutes until smoking. Add oil.
  4. Place 2 beef balls in the pan. Immediately press each one through a parchment paper square with a flat metal spatula for 10 seconds until 1/4 inch (6mm) thin. Season tops with salt and pepper.
  5. Cook undisturbed for 2 minutes until edges are fully browned.
  6. Flip with a thin spatula, scraping firmly under the crust. Cook the second side for 1 minute. Place 1 slice of American cheese on each patty. Cook 30 seconds until cheese melts.
  7. Stack one patty directly on top of the other in the pan. Press gently for 3 seconds. Remove. Repeat with remaining patties.
  8. Toast bun halves face-down in a dry pan over medium heat for 60 to 90 seconds.
  9. Spread sauce on both bun halves. Assemble: pickles, double patty stack, tomato, lettuce, sliced onion. Serve immediately.
