Ingredients

For the Salad
  • 500g (1 lb) lean halal ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp fine salt
  • 1/2 tsp black pepper
  • 1 head iceberg lettuce, roughly chopped
  • 1/2 cup (55g) shredded sharp cheddar cheese
  • 1/2 cup (65g) dill pickle slices
  • 1/2 medium white onion, finely diced
  • 1 tbsp sesame seeds, lightly toasted
For the Big Mac Special Sauce
  • 1/2 cup (120g) full-fat mayonnaise
  • 3 tbsp sweet pickle relish
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 tsp ketchup

Method

  1. Heat a large skillet over medium-high heat for 2 minutes. Add the ground beef and break into small crumbles. Cook for 4 minutes without stirring.
  2. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Stir and cook for 6 to 8 more minutes until no pink remains and internal temperature reaches 75°C (165°F). Drain excess fat and rest the beef for 5 minutes.
  3. Whisk together mayonnaise, sweet pickle relish, yellow mustard, apple cider vinegar, onion powder, garlic powder, smoked paprika, and ketchup in a small bowl until smooth.
  4. Divide the iceberg lettuce between 4 bowls. Add one quarter of the rested beef to each.
  5. Top each bowl with shredded cheddar, dill pickle slices, and diced white onion. Drizzle 2 to 3 tbsp of special sauce over each. Scatter sesame seeds on top and serve immediately.
